FAQ's

What is the best way to taste/eat your confections?

Serve NeoCocoa confections at room temperature. This brings out the full character and bouquet of the chocolate.

What is the shelf-life of your products?

Our truffles are best eaten immediately as they do not contain any preservatives or artificial flavors or ingredients. However, if you will not be consuming them right away, please refer to the best by date that is noted on the package. All our other confections have a 6-month shelf life.

What is the best way to store your products?

For best results, store chocolate confections in a cool, dry, and odor free environment (preferably below 70 degrees F). While refrigeration in an airtight container can help extend the life of our confections, it is not recommended especially for those products containing salt. The humidity may cause the salt to liquefy and for the chocolate to bloom.

What is chocolate bloom?

Chocolate bloom is a whitish coating that can appear on the surface of chocolate. There are two types of bloom: fat bloom, arising from changes in the fat in the chocolate; and sugar bloom, formed by the action of moisture on the sugar ingredients.

Can I still eat my chocolate if it shows evidence of bloom?

Chocolate confections that show signs of either fat or sugar bloom are perfectly edible. While they may not look as nice, they are perfectly safe to eat and likely just as delicious.

What does “% cacao” mean?

When you see “% cacao” printed on a label, it refers to the total percentage of ingredients by weight in that product that come from the cocoa bean, including the chocolate liquor and cocoa butter. A higher “% cacao” lends a more intense chocolate flavor. A higher “% cacao” also indicates less added sugar.

What “% cacao” do your confections contain?
